VINES & WINE - Expressive Terroir

"When we first set eyes on our vineyard sites, we knew immediately it was meant to be our vineyard—its beauty spoke to our vision for extraordinary wine."

DORVAL will be opening a second location sometime in 2025. - "The Hidden Vineyards."

Sitting at 1200 feet this rugged location sits atop a majestic mountain overseeing the entire central valley all the way to the coastal mountains.

DORVAL VINEYARDS

With over 200 acres of owned land DORVAL vineyards span across rolling rugged terrain in the San Juaquin Valley / Madera, CA foothills. These three ranch sites give us a competitive edge over your typical valley wine. With terrain and soil much like Paso Robles we benefit from an evening climate that is very cool but dry which means less disease exposure and no need for heavy sprays. The gusty Mono Winds do much of the work for us by giving our vines the needed airflow that naturally keeps mildew and other pests away.  The terrain and vineyard locations are strategically developed for maximum sunlight exposure on the east side while reducing too much direct western sun due to elevated temperatures. We place great emphasis on regenerative farming and drought irrigation. Collectively our approach and diverse soils shape our wine into big, bold elegant wines. Our vineyards will captivate your palate and elevate your tasting experience.

Italian Fiano wine is known for its aromatic complexity and vibrant character. It often features notes of citrus, honey, and stone fruits, with a floral undertone. The wine typically has a medium body and a refreshing acidity, making it both lively and well-rounded. With a slight minerality and a hint of nuttiness, Fiano offers a delightful balance, making it a great companion for seafood and light dishes.
