About Cabernet Sauvignon

Perhaps California’s most widely planted and recognized varietal, Cabernet Sauvignon is well known for its extreme quality and ideal vigor. Spanning aross multiple continents it is grown in nearly every major wine producing regions of the world. Cabernet Sauvignon jumped to world wide fame due to its prominence in Bordeaux wines, where it is often blended with, Malbec, Petit Verdot, Merlot,and Cabernet Franc. As a benchmark grape, Inspired by greatness, DORVAL is growing and making two very special clone varieties, clone 169 and clone 30.

Althgough wildley grown globally the Cabernet Sauvignon grape is a relatively new variety, the product of a chance crossing between Cabernet Franc and Sauvignon blanc during the 17th century in southwestern France. Its popularity is often attributed to its ease of cultivation—the grapes have thick skins and the vines are hardy and naturally low yieldingbudding late to avoid frost and resistant to viticultural hazards such as rot and insects—and to its consistent presentation of structure and flavors which express the typical character (“typicity“) of the variety. 

The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine’s aging potential.

DORVAL CABERNET SAUVIGNON VINEYARD’s & CLONE TYPES

Being inspired by greatness and taking action are two things DORVAL’s owners do very well. Knowing how critical clone type is and with 250 known Cabernet Sauvignon clone types and the pursuit of precision phenolics; Clone 169 from Bordeaux France and clone 30 from Napa Valley California were the logical choices for our vineyard ranches.

The incredible demand for Cabernet Sauvignon 169 is gaining momentum due to it’s infectious qualities. Cabernet 169 clone is a more recent addition to the Napa Valley, selected in Bordeaux by the institute of research called INRA, then imported to the U.S. in 1997.  This clone is known for its small berries and moderate yield, looking physically closest to Clones 7 and 337 with slightly smaller clusters. All of its attributes are just that much better in our opinion than any other clone type.

Cabernet Sauvignon 169

One thing we are known for is our intentional planting of the best clones known in the industry. Starting with our Cabernet Sauvignon Clone 169. This clone is considered the SUPERIOR Cabernet where it originated in Bordeaux France.

Planted in April 2024 we are prepping these vines to become the new benchmark in the central valley region. This varietal was planted to reflect our contemporary and old world approach to wine grape growing and wine making. We are taking reservations now for this varietal and we expect our first release to be in the fall of 2026. This vintage is expected to be young and we recommend letting this bottle sit for 6 months up to 20 years so it can reach its peak point of aging.

These vines are trained on a single high wire cordon with a natural sprawl to provide dappled sunlight. Pruned to produce less volume and mostly dry farmed these grapes have the potential to be absolute works of art.

Cabernet Sauvignon 30

Originating in the late 80’s in the Stag’s Leap regions  of Napa, California; Cabernet Sauvignon 30 is regarded as a supreme California Cab due to its extremely well rounded qualities.

This varietal was also planted on our estate in April of 2024. We expect to harvest our first crop in the fall of 2026. DORVAL is also taking pre-orders for this varietal with an early 1 case minimum order. Our Cab 30 clone is

As each vintage ages the prices will reflect it’s aging. Cabernet Sauvignon clone 30 is a very full body wine with aging potential up to 20 years much like our 169. Its best to wait at least 3 months before opening a bottle. Expect the prices to increase each vintage due to this grapes poetic qualities with each year that goes by.
